Spinach salad

Ingredients for 2 to 3 persons
- 6 cups fresh baby spinach: ~180 grams
- 1 cup sliced strawberries: ~150 grams
- 1/2 cup crumbled feta cheese: ~60 grams
- 1/4 cup red onion, thinly sliced: ~25 grams
- 1/4 cup walnuts or pecans, toasted: ~30 grams
- 1/2 cup cherry tomatoes, halved: ~75 grams
- 1 avocado, sliced: ~150 grams (1 medium avocado)
- 1/4 cup olive oil: ~60 grams
- 2 tablespoons balsamic vinegar: ~30 grams
- 1 tablespoon honey: ~21 grams
- 1 teaspoon Dijon mustard: ~5 grams
- Salt and pepper to taste: a pinch each (about 1 gram in total)
- INSTRUCTIONS
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Adjust the seasoning to taste.In a large salad bowl, combine the spinach, strawberries, feta cheese, red onion, toasted nuts, cherry tomatoes, and avocado.
