Meat pie is a delicious pastry enjoyed across many cultures, especially in West Africa. To bake a classic meat pie, begin with the pastry dough. In a bowl, mix 500g of all-purpose flour, a pinch of salt, 1 teaspoon of baking powder, and 250g of margarine or butter until crumbly. Add a little cold water gradually to form a firm, non-sticky dough. Cover and let it rest for 10-15 minutes.
For the filling, heat oil in a pan and fry diced onions, then add minced meat (about 300g) and stir until browned. Add diced carrots and potatoes, and season with salt, thyme, curry powder, and seasoning cubes. Add a bit of water and allow it to cook until the vegetables are tender. Thicken the mixture slightly with a tablespoon of flour mixed in water.
Roll out your dough on a flat surface and cut into circles using a round cutter or bowl. Scoop some filling onto one half, fold over the other side, and seal the edges with a fork. Place the pies on a greased baking tray, brush the tops with egg wash (a mixture of beaten egg and water), and bake in a preheated oven at 180°C (350°F) for about 30–35 minutes, or until golden brown.
