Kottu is a popular Sri Lankan dish made with shredded flatbread, vegetables, eggs and meat or chicken. Here's a simple recipe to make delicious Chicken Kottu Roti at home:
*Ingredients:*
- 300g Godamba roti or paratha, cut into strips
- 200g chicken, cooked and shredded
- 2 large eggs
- 150g mixed vegetables (carrots, cabbage, onions)
- 1 green chili, chopped
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp coconut oil or vegetable oil
- Optional: soy sauce, chili flakes, or other spices to taste
*Instructions:*
1. *Prepare ingredients*: Chop the roti into small pieces, slice the vegetables and cook the chicken.
2. *Heat oil*: In a large wok or pan, heat oil over medium-high heat. Add garlic and sauté until softened.
3. *Add vegetables*: Add mixed vegetables and stir-fry until they're slightly cooked.
4. *Add eggs*: Push the vegetables to one side, crack in the eggs and scramble them. Mix with vegetables.
5. *Add chicken and roti*: Add cooked chicken and stir-fry for 2 minutes. Then add the roti pieces and mix well, chopping and tossing with two spatulas.
6. *Season*: Add curry powder, turmeric, salt and pepper to taste. Mix well ¹.

- Use leftover chicken curry or vegetables to make it more flavorful.
- Add cheese for a creamy twist (Chicken and Cheese Kottu).
- Experiment with different spices or vegetables to suit your taste.
