tomatoes are fragile, fleshy succulent fruits, rich in vitamins and minerals, that they hardly escape our meals in a week. we have faced challenges in preserving this rich and nutritious fruits due to it short shelf life. if we can prolong our everyday tomatoes by making right choices in using them, we can have them in and out of season, with even a natural alternative to artificial tin tomatoes, by just observing certain hygienic rules and preservation techniques .
